Take gingelly oil in a pan and add the peanuts to it. Roast for 3 mins until they change colour. 2. Add urad dal, mix and saute for a few seconds and then add the white sesame seeds. 3. To this, add the red chilies and maintain the flame on medium low. Roast for 2 mins. 4. After 2 mins, add the dried grated coconut and saute until they are golden brown in colour. 5. Turn off the stove, cool the ingredients completely and then grind them coarsely in a mixer jar. 6. Peanut powder is ready. For the Peanut Rice: 1. Add gingelly oil to the kadai and add urad dal, chana dal, mustard seeds, red chilies and saute. 2. Once the mustard seeds splutter, add hing and mix well. 3. Keep the flame on low and add the peanuts. Saute for 1 min and add the curry leaves. 4. Roast until the peanuts turn golden brown and add the cooked rice. 5. Mix everything well and add the salt. Mix again. 6. Finally add the ground peanut powder and give it all a quick mix. 7. Lastly add a good dollop of ghee and mix well for accentuating the flavours a bit. 8. Simple yet utterly flavourful peanut rice is ready to be served hot with some papads and aloo fry by the side. CAPSICUM RICE Prep Time: 5 mins Cook Time: 15 mins Servings: 2 Ingredients To Make Masala Powder Gingelly Oil - 1/2 Tsp Chana Dal - 1 Tbsp Urad Dal - 1 Tbsp Coriander Seeds - 2 Tbsp Cumin Seeds - 1 Tsp Red Chilli - 7 Nos A Small Piece Of Tamarind Grated Coconut - 2 Tbsp To Make Capsicum Rice Gingelly Oil - 3 Tsp Urad Dal - 1/2 Tsp Chana Dal - 1/2 Tsp Mustard Seeds - 1/2 Tsp Red Chilli - 2 Nos Asafoetida Powder - 1/4 Tsp Curry Leaves Red Capsicum Yellow Capsicum Green Capsicum Turmeric Powder - 1/4 Tsp Salt Cooked Rice Ground Powder Ghee Method For making the Masala powder 1. Add gingelly oil to a pan and to it, add chana dal, urad dal, coriander seeds and roast for about 2-3 min on a medium-low flame. 2. Add cumin seeds, red chilies, tamarind bits and roast everything together. 3. Roast until they turn slightly golden brown in colour. 4. Then add the grated coconut and roast until it is too golden brown in colour. 5. Turn off the stove and cool the ingredients completely and grind them into a coarse powder. 6. Your Masala powder for the Capsicum rice is ready. For making the Capsicum rice 1. Chop the red, yellow and green bell peppers. 2. Take gingelly oil in a kadai and add urad dal, chana dal and mustard seeds. 3. Once the mustard seeds start spluttering, add the red chilies, asafoetida and curry leaves. Roast. 4. To this add the chopped bell peppers and saute until they are cooked for 2-3 mins. 5. Add turmeric powder, salt and mix well. 6. Add the cooked rice and mix gently. 7. To this, add the ground masala powder and give it all a quick mix. 8. For enhancing the taste, add about 2 tsp of ghee and mix well. 9. Yummy Capsicum Rice is ready to be served hot with fryums and Kovakkai fry by the side.
